Bschüssig Spätzli are traditional Swabian gouge-cut egg noodles made from durum wheat semolina, eggs, and salt. They have a rough surface and a firm bite, and are a staple of regional German comfort food.
Boil in a large pot of salted water for 3–4 minutes until they float to the surface. Drain and serve immediately with your preferred sauce or topping.
They pair well with butter and grated cheese (a classic Swabian combination), mushroom cream sauce, or a simple pan-fry with onions and herbs.
